@maid not sure about the "easy" part but a friend of mine looked into Maddy (maddy.email/) and ran into some issue or shortcomings (not exactly sure what, but the IMAP part is still beta). They switched to recommending Mailcow (mailcow.email/) instead after that. Mailcow is dockerized so should be quite easy to get started with.
