I'm usually in the area shopping at Uwajimaya, or getting something to nibble on at Samurai Noodle or Thai Curry Simple, both of which are absolutely delightful.
I'm afraid I don't really know of any HK style Western food places! It definitely sounds like something that'd be pleasant to try, though. :)

And yeah, they have them every once in a while in the international district, and usually have a decent few carts around to nibble from. I was on cloud nine when I discovered the Ezell's cart.

Was the BBQ cart maybe called Touchdown's? I used to go there frequently since it was the only place to get BBQ within walking distance of my old work.
And yeah, good vegan food always impresses the heck out of me, since I'm normally a bit of a meat fiend.
Really wish Seattle had more stationary food carts (since I think most of the local ones move around day by day?), but we have the night markets at least
