The newest one, XI. It's a bit gentler than most of the series and has great story, characters and art.
5 was pretty good for a fully classic experience! I played through that with the DS version.

You could also turn off those barriers! Also, I love that the game scores your hits based on how clean of an arc you make before and after, so you have to actually make cutting motions instead of twitching in that general direction
