not this time. it feels like someone fucked up their cooking, either like, forgot to actually SCRAMBLE the eggs, and tried at the last minute to make it scrambled, and is now making up a term to cover for the screw up, and they've gone hard into trying to make it legit

The trouble is it's always simultaneously over and under beaten.
If you're going to premix it, only mix it a little until it's vaguely the same colour throughout. The rest happens in the pan. Also pull it out when it's "moist".
OR
Beat the living hell out of it to get the air in for maximum fluffiness, but then pull it out WAY early (almost runny) or it dries out.
