let me say as a latina that "latinx" was not coined by "woke white people" it was coined by south american and mexican people so no you are not "offending" us if you use gender-neutral latinx instead of gendered latino or latina its just that nothing less unwieldy has come around
yes there's "latine" which uses e for gender neutral instead of x but while i'm somewhat fond of it being less cumbersome, it sounds too close to "latrine" for me to be fully comfortable with it
grammatical gender sucks and working around it is super hard
