@NinTheFolf What kind of curry have you been focusing on? I've mostly been looking at Thai yellow curry.
I've had some limited success with some small name semi-local curry paste brands, but it always feels like it's lacking something vital and fundamental.

Yeah, I've been using yellow Thai powder.
I can't use most pastes because food allergies and most of them have wheat or milk in some regard.

Keep an eye out for Thai True and Thai Home curry pastes, though they're admittedly reeeeaally hard to find.
They're both gluten free and vegan, and are the only pastes I've had any degree of luck with... both local to Portland, OR though, though...

That, and I want to learn to make a good stir fry at some point.
I need equipment I don't have for that though, so right now I'm focusing on trying to make a lazy curry taste good :V
