I mean, the only horse in all of the game is the horses in the charioteer boss. Which is A: optional as it only grants access to a particular PvP covenant, and B: easy to miss.
Also you don't directly fight the horses normally.
Reminded that dark souls 2 has the term "horse" for.... Some reason

there's also a WiiU version but it's a really haphazard terrible port and chops out entire chunks of levels because Reasons, and a 3DS version I know nothing about
