I sometimes throw it in when the recipe doesn't call for it. I'm making beef fajitas today, and I've started using merlot instead of beef stock, with the spices and simmering. It adds a nice flavor.

@ScottSoCal @dpnash @theautisticcoach @actuallyautistic I do that as well especially with beef recipes. We usually have a nice drinkable cabernet around that I sub for some of the beef stock.
