@joshua cold brew doesn’t get the actual flavor of the coffee
The time just sitting in room temp/cold water doesn’t extract enough of the flavors from the beans.
If you do a flash iced coffee where you do a pour over with some of the water replaced with ice you get the hot extraction from the pourover and then it immediately gets chilled as it drips onto the ice. Sometimes cold brew does get some unique flavors from coffee but personally it’s just not worth it

i think i like the bitterness from some of the cafes ive been too
starbucks tho, as always, was terrible

idk about other cafes but at Chromatic we literally just found whatever old beans we had and made a blend of up to 3 different types for cold brew. I’ve definitely had some pretty good cold brew but now I’m like 95% flash iced coffee at home (I’ll sometimes still make cold brew if I have a decent amount of expired beans)
