I've gotten into Fallen London for the past couple of days and they have all kinds of options for how characters in the game will address you that you can change any time you like
Including non-binary options!

Failbetter Games is beyond awesome in a great many ways. Sunless Seas, set in the same universe, is very much worth a look as well.
