how do i make a good fish burger?

@LaserScheme I've never tried but I think my approach would be to mince the fish with bread crumbs, and maybe add an egg to help it stick together.

@LaserScheme Possibly potato or mashed beans could also work instead of (or in addition to) breadcrumbs as some kinda medium to help it clump?

@LaserScheme well first you gotta find a good fish. be careful with this one, it can be easy to mistake a good fish for an evil fish if you aren't trained to look for the differences. An easy way to tell is whether or not the fish is wearing a black hat, has a handlebar moustache and a nefarious look in its eyes. If you hear vaudeville music however, be careful as it could actually be a good fish who is just acting.

@LaserScheme probably depends on the fish. It's usually easy to ask the fishmonger for fish cooking advice. Some fish is better grilled than crumbed, for example.
My only fish advice is to avoid the escolar/"butterfish"... I've paid the dark price for eating it 😱
